White Chicken Chili

I was looking for this post for a friend and realized I haven't put it on here.  So, here you go.  My award winning White Chicken Chili.

Lots of ingredients, but Delicious!!


1/4 cup Vegetable Oil (I use EVOO)
2 pounds diced, cooked chicken meat
2 onions, chopped
2 cloves garlic
20 ounces chicken broth
1/2 cup salsa
2 cans petite-diced tomatoes
2 (7 oz each) cans diced green chilies
1 teaspoon dried oregano
1 teaspoon ground coriander seed (I usually make without!)
1/2 teaspoon ground cumin
4 (15 oz each) cans white beans (juices not drained)
2 cans corn (juices drained)
salt to taste
ground black pepper to taste

Heat oil and and cook onion and garlic until soft. Stir in broth, salsa, diced tomatoes, chilies and spices. Bring to a boil and simmer for 10 minutes. Add corn, chicken and beans. You can simmer for 5 minutes, but I have found it best to simmer for as long as possible up to an hour. Serve with toppings for people to choose from: cheese, avocado, sour cream, tortilla chips or cornbread. (Cornbread is my Favorite!!)

Month of Gratitude - Day 21

Okay, caught up.  That was a lot.  Sorry.  Also, today is heavy.  Sorry.  Needed to do this.

Today, November 21st, Justin {my brother} would have turned 33.  He is 1 year and 3 days older than me.  He spent his life in a wheel chair making other people smile.  I aspire to be like him one day.  I don't remember much of life before he died.  I was 7 years old and have blocked out life before 10.  I guess that is my way of coping, but I remember stories.  His favorite color was yellow.  He called me Gigi and whenever my mom entered the room, he would say "Hey kid!"  Yosh {my little brother Josh} was only 5 when Justin passed away.  But the person Justin loved the most is my Dad.  The sun rose and set in my Dad.  This had to be incredibly hard for my mom, but she was always a trooper!

Justin spent most of his life in a nursing home for children.  His physical and mental handicap's never got him down.  He was always happy and was the bright spot in every person's eye he came across.  Today, I am thankful for my knowledge of the Plan of Salvation and the knowledge that I have that I will once again be able to see him.  I find comfort in my belief that he watches over me.  I am sure he comforted my kids as I was being the wild child I was and reassured them that I would make the right choice.  I think he would be so proud of me today.

I learned to serve at a young age as we would go visit him in his nursing home.  I would help feed or play with other children that lived in the nursing home.  Some of the stores I have heard are actually quite impressive.  I think that serving others is a way that today, I can feel close to him.  Even though it has been 24 years since he passed away, I can still feel him.  I can't explain it, but I can feel him.  I know he watches out for me.  {I can} but I can't wait for the day that I get to put my arms around him.  I was so young and didn't know what was going on.  I don't remember saying goodbye to him.  Sometimes, it seems so hard.  Especially on days like today!

My Uncle Bret is a musical person and wrote a song for my parents from my brother.  Below are some of the words.  I honestly can't remember all the words and I don't have a copy, but it is comforting to at least sing the portions of the song that I can remember.  I will also put on the bottom of this post a picture of a picture.  This is all I have of him.  Other than the love for him in my heart!!

Dear Mom and Dad,

I'm writing you this letter to try and help you understand.
I just had a talk with Heavenly Father, He says we'll have to do the best we can.
'Cause Mom and Dad, I'm not going to be like other kids, I won't be able to run and jump and play.
My mind will be as clear as any ones, but when it speaks, my body won't obey.
Mom and Dad, don't be upset.  Mom and Dad, try not to forget. 
God is up here watching and helping from above, oh Mom and Dad, I give you all my love.

Month of Gratitude - Day 20

Oh dear.  Home from church with the kids today.  Justin started throwing up late last night so that means mom and kids stay home from church.  Aaron has Bishopric meetings before and after church, so kids can't go with him.  Today I am super thankful for Washing Machines and their ability to get out chuncks without me having to pick them off.  YUCK!!!

Month of Gratitude - Day 19

Costco!!  Need I say more?  I love Costco.  Carne Asada bake.....bulk veggies/fruit....heavy whipping cream.  I know, such random  items.  Samples...smiles and running into friends.  Our membership at Costco pays for itself!!  Love you Costco!

Month of Gratitude - Day 18

Today, we took Aaron's car to get the snow tires on.  The AWESOME shop that we took the cars too are so good.  They could have taken us for more money, but they were very honest and good to work with.  They made sure we didn't pay for anything that could be billed to the insurance.  ANYTHING!!  I am so thankful when we come across good honest people who hold their integrity as highly as I do!!

There are good guys still out there!!  We need to make sure we are being the good guys that we want out there!!

Month of Gratitude - Day 17

Aaron has been sick.  He doesn't get sick often, but they cancelled his clinic Tuesday afternoon and all day yesterday.  I'm super thankful today for his job and the wonderful people {for the most part} that he works with.  That they understand how good of a person Aaron is and his dedication to his job and his patients.  He works so hard day in and day out.  He is dedicated to his patients and the nurses he works with.  Everyone loves Aaron.  He is such a good guy.  Good job for a good guy!  Perfect fit!!

Month of Gratitude - Day 16

Wednesdays.  Oh how I loathe the.  Almost as much as Sundays.  We start our Wednesdays by getting Nate off to school and Kennie of to Ignite.  We head out the door around 12:15 for Maggie's preschool.  Justin starts piano while I pick up Maggie and Hyrum from school and Kennie walks over and gets Nate.  We all meet back at home where Kennie starts his piano lesson while I cook dinner.  We throw food in everyone and send Kennie out the door for scouts.  Add into that getting everything done for school for Kennie and Justin and I am just pooped at the end of a typical Wednesday.

So, tonight, I am thankful for busy days that end.  The chance I have at the end of the day to read my scriptures, conference talks, pray and unwind from the day.  I am thankful that tomorrow is a new day and I don't have to live this day over again!!

Month of Gratitude - Day 15

So, I know I'm a bit behind, but I have been writing things down.  I just haven't been able to get on and take the time. 

Today, I am thankful for down days.  It seems in life we go and go.  Tuesdays are usually our down days.  No preschool, no special classes.  It's a day to spend in our PJ's reading our History and Science.  Spending time doing art projects and just enjoying each other's company.  Honestly, I get very little housework done, but I do spend quality time with the kids that prepare me for Wednesdays.  Ug, Wednesdays are very difficult.

Today, I am thankful for our transportation.  With the van in the shop, I have realized how much I really depend on my car.  I will be so thankful when I get my van back.  Hoping it will be this week!!

After a day such as today, I am super grateful for a home to snuggle in and a bed to crawl into.  Pull the covers up to my chin and drift peacefully into slumber.  Sunday's are going to be the end of me....

I know, I'm a bit behind.  Crazy weekend!

Day 12 happened to be my sweet husband's birthday.  So, on this day, I am SO thankful for the man that I have chosen to spend all of eternity with.  I can honestly say that it hasn't been easy, but I wouldn't want to share this ride with anyone but my best friend by my side.  He makes every day worth living!

Month of Gratitude -- Day 11

Today is supposed to be a lucky day.  So, at 11:11 on 11/11/11, here is 11 things I am thankful for!

  1. First and for most - I am thankful for all the men and women who past and present have served our country.  Supported our right to freedoms that we enjoy!  I am thankful for those who will serve our country in the future.  I know first hand that it is not an easy sacrifice, but know it is done with humility and love.  I am THANKFUL for my husband and all he does - but look to tomorrow's post for more on that.
  2. I am thankful to live in a free country!  Freedom of religion, fredom to teach my children, freedom to choose my life partner and all the other freedoms I enjoy! 
  3. I am thankful that I have been able to enjoy the  joys of motherhood.  I have several friends that have struggled with this for many years.  I love my children and am thankful for the lessons I have learned from them.  I pray that all those who desire will be given the chance to experience the joys of motherhood.
  4. Pinterest - how sad is it that this even ranks in my top 24 let alone in the first 11 days.  Pinterest is so addicting and I LOVE it.  I have found so many useful/practical tips and a never-ending list of crafts on my to-do list!!
  5. DVR - Since I was introduced to DVR, my life is changed.  I no longer have to run on my TV's time.  I can record my show and watch it later.  Or, watch it again.  LOVE my DVR!!
  6. Facebook - Unlike my children, I can say that I remember life before Facebook.  HA!  Because of this, it has made moving to far away places a lot easier.  I can keep in touch with family and friends near and far by simply posting what I am doing now.  I fell more a part of people's lives.  I know, this is weird!
  7. I am thankful my kids have pet allergies.  For this reason - I will not ever have to take care of a cat or dog.  I can't ever help someone take care of their pets.  BEAUTIFUL!!!
  8. Dishwashers - Need I say more?
  9. Paint - I am thankful for the ability to change my current surroundings and making my home feel like home.  Not just another house. 
  10. Make-up - again, the ability to change my current...haha.  Just Kidding!  I like getting dressed up - I like the feeling that I look good.
  11. I am thankful for sexy beast clothing.  Haha!  It's late.  I am thankful that there are clothes that make me feel hot!!  Feeling like you look like a million dollars is sometimes better than actually looking like a million dollars. 

Month of Gratitude - Day 10

Today I am thankful for the Scriptures.  We have been given such an amazing tool to draw us closer to our Heavenly Father.  Anytime we have a problem, we can get on our knees and then turn to the Scriptures to help find our answers.  We are shown so much love by our Heavenly Father and the Scriptures is just one of the many things he does for us.

Month of Gratitude - Day 9

Today is one of those days that I wish I would have stayed in bed.  Slept the day away.  A wise woman once said that it is better to pass through sorrow that we may know Joy.  Ya, not so sure about that one.  I feel like garbage today.  We have had the sick bug circulating our house since Aaron left for San Antonio 1 1/2 weeks ago.  Last night and today my stomach has been unsettled.  My world is spinning and my head is pounding.  What I have been able to swallow down today came right back up.  I hear each foot on ever stair and every syllable uttered. 

So, today, in my 9th day of my month of gratitude, I am thankful for my health.  It takes these sick days for me to be even more grateful!

Month of Gratitude - Day 8

 We are told to avoid the natural man.  Today's thankful moment might go against that.  Not sure. 

Today, I am thankful for some of my human desires.  Not all of them.  Chocolate is going to be the death of me.... haha!

I am thankful for my desire to better myself.  I am speaking mostly of running.  I want to be better.  I want to run faster and longer.  I want to increase my stamina and be able to do more.  I like to think this helps me in other areas.  I push myself.  I accomplish what I set to accomplish.  I have learned my limits are just that.  MY LIMITS.  I don't have limits, only the ones I place on myself.

Yesterday, I didn't feel well so I decided to just walk on the treadmill for 20 minutes.  Do you think I did it?  NOPE!  One of my running songs came on and for the life of me, I COULDN'T walk.  I had to run.  My legs and brain just started going.  It was such a weird feeling.  My walking for 20 minutes turned into 2.6 miles in 30 minutes.  Yep, super good.  And guess what?  I felt so much better the whole rest of the day.  That right there is a huge lesson to all of us.  Sometimes, those human desires we have can do us good.  I crave the feeling after I run.  The self satisfaction and success of completing yet another running session.  I can't wait for the feeling after Carli and I run our 1/2 marathon in May.  I am so super excited.  Really?  One year ago, if you would have told me I would be training for a 1/2 marathon I would have told you that you were NUTS. 

Because I know myself, I know it will not stop at a 1/2 marathon.  I will need to train and run a full marathon.  For now, I am extremely happy working for my 1/2.  Set a goal today that you don't think you can do.  Then, amaze yourself by doing it!!

Month of Gratitude - day 7

Today, I am thankful for Heavenly Father's timing.  I know - that sounds really weird.  There are times when I think, "What the heck?"  There are times when I can not speak but wonder seriously about the Lord's timing.  Then, something happens and I am reminded that there is a plan for all of us. 

When Aaron was called into our Bishopric a few weeks ago, it was one of those "What the heck?" moments.  He is only 33.  He is a physician in the Air Force who has recently been asked to see more patients.  He has applied for a fellowship that would start next year which would require us to leave Alaska in May.  The Stake Presidency still felt strongly about Aaron being in the Bishopric - even if for a short time.  I felt peace with the calling and knew that things would work out and this was for the best, but I couldn't help but wonder about the timing of all of this.

Fast forward to this last Saturday.  I was helping a friend at the DMV and got a call from Aaron.  Only he couldn't hear me, and I had a strange buzzing in my ear.  Super annoying.  I turned my phone off and on again and it still didn't work.  Everything else worked on my phone, but the actual phone.  We just happen to be near an AT&T store and so I stopped in.  They looked up my phone info and while I wasn't due for an upgrade until December 7th, my phone was still under the 1 year Apple warranty and told me to go to Apple.  There just happened to be an Apple store in the mall as well.  They just happened to have an appointment with a tech guy available right then.  Within 2 minutes, he asked me how I felt about getting a new phone.  Just like that, I had a new phone.  Even though I am not up for a new phone for another month, I still got a new phone.  Problem fixed.  All is well with the world.  My cell phone works.

Bishopric vs. new phone?  Not really a comparison.  However, the timing with the warranty and the phone issue reminded me that Heavenly Father is aware of each of us and he has a bigger plan.  So while I still at times question the whole Bishopric thing (not Aaron, just my ability to handle it), it's the little things that remind me that we are not running on our time.  We run on the Lord's time.

Today I am thankful for Inspiration.  It comes in all forms.  I receive Inspiration as a mother, as a wife, as a daughter, as a friend and for our Primary.  I have been able to answer many prayers by listening and acting upon the inspiration that I receive.  I have also been the recipient of others inspirations.  We are all answers to others prayers - If we only act!

Today, I am so very thankful for music.  In all forms.  My ability sit down at my piano and play until I feel calm again.  The chance I get to sit on the couch with my eyes closed as Aaron plays the piano.  Sometimes, I even get to sing along.  In my opinion, nothing brings the spirit in faster than music.  I love plugging the earphones in and listening to a variety of music that I love and that I choose!

I never ever thought I would be grateful for what I am grateful for today.  For day 4 - I am grateful for the ability I have to home school my kids.  That we live in a land that allows me to stay home with my kids and teach them.  I get to be the one constant in their lives.  The one that they talk to and play with. At times it is very trying, but we get through those times  For the most part, we all really enjoy this time we have been giving.

Month of Gratitude Thanks - Day 1

It is November.  I am not feeling very grateful for my life right now so I am going to be doing a month of giving thanks.  I a not just going to list the ones most common used.  My desire is to realize how much I really have, and I'm not talking $$.  Having said that...

Day 1 - I am so very thankful for my eyes. 

Even though I complain about my eyes a lot because of the constant need of assistance from glasses or contacts, I am still able to see.  While taking Kennie & Justin on an overnight field trip to the Seward Sea Life Center last month, I was in awe the entire 2 hour drive down of the beauty around me.  I snapped a picture. 



Can you see all those different colors?  Amazing.  I am so grateful for my ability to see all that is around me.

Snickers Hot Chocolate

So, the one thing Alaska has done to me is hooked me on the drive through coffee shacks.  Before you go crazy, I get hot chocolate.  Different kinds.  I have found one that I LOVE and have learned how to make.  Hopefully you will enjoy my recipe.

Snickers Hot Chocolate

Ingredients:
2 Tbsp sugar
1/4 cup water
1 1/2 cups skim milk
2 Tbsp cocoa
1 tsp vanilla extract
caramel syrup
hazelnut (or peanut butter) syrup
chocolate shavings


Directions:
* Step #1 Measure water, cocoa, & sugar in glass measuring c or large mug.
* Step #2 Microwave on high for 1-2 mins to make chocolate syrup.
* Step #3 Stir in milk & vanilla & microwave until warm.
* Step #4 Stir in 2 tsp caramel syrup 2 tsp hazelnut (or peanut butter) syrup.  Depends on what you can find.
* Step #5 Top with whipped cream & chocolate shavings.

Seriously, my favorite!!!  ENJOY!!

Long Overdue Update!

Sorry folks.  Here is an update.  I know it's long overdue and I could list all my excuses, but how about I just get to the update.

Aaron - He is sure glad to be with his family in Alaska.  Being deployed was a good experience for him for his career, but he enjoys his job here more!  He is slowly getting back to where he needs to be and feeling more a part of things.  He has a few business trips planned next month, both to San Antonio.  While there, he will interview for the fellowship he is applying to and if accepted (we find out in Dec.) then we would be moving in May.  Extra prayers would be appreciated that we get this spot.

He recently returned from a canyoning trip at Lake Powell with his dad that he really enjoyed.  He spent 5 days in the canyons and then got to catch up with his family. 

Sassy - What is there to say?  She hasn't scrapbooked in months, she spends her time teaching Kennie & Justin, cleaning the house, making dinner and trying to keep Maggie out of trouble.  Sounds really pathetic and only takes up 2 sentences, but it really takes all day.  UG!!!

Kennie - He is sure growing and learning at such a fast pace.  Kennie was baptized July 3rd surrounded by family & friends.  (We missed you Mark & Carli).  He was super excited for that milestone in his life.  He likes to read his scriptures and will also read anything he can get his hands on.  He LOVES dinosaurs and can tell you all sorts of crazy things about a whole lot of different dinosaurs.  Not just the ones we learned about when I was in school.  He can tell you more dinosaurs than there are letters in the alphabet.  He still says he wants to be a paleontologist when he grows up.

Justin - He has really turned into his own person.  He is still very interested in Sharks.  Will read everything he can get his hands on about them, but to get him to read a chapter book or ANYTHING else is like pulling teeth, until recently.  He started reading the Weird School series and is liking it and doing well.  Here's hoping!  He loves to torment his sister and also really enjoys driving his mother crazy!  Which he does very well.  He can still see the unspoken need in others and will offer to help or just help before they can ask.  One of my favorite qualities about him. 

Nate - Nate is loving being a big Kindergartner.  Today was his day to take snack for the whole class and he was over the moon!!  He basically bounced to school this morning.  He loves bringing home his green apples everyday (A way to communicate to parents their behavior for the day) and checking out books from the library.  He is making incredible progress there and everyone that works with him loves him.  They don't believe me when I tell them he is a holy terror at home.  He's just too cute.  Which is what everyone said about his Uncle Josh.

Maggie - Maggie recently decided she wanted to be a boy.  Okay, not really, but she cut her hair.  And not something that we could fix, she cut it to the scalp.  She is not sporting a short pixie cut.  She thinks she is beautiful and that's all that matters.  She (hopefully) understands that she is NEVER to do it again.  She is still the total princess and loves anything pink and glittery.  She dresses up constantly and loves to play house with her brothers where she is always the kitty.  Super funny girl.  She still has Aaron wrapped around her finger and uses that every chance she gets!!  We are very thankful she potty trained (easily) and is now a big girl!  No more diapers for us!! 

We are enjoying fall this year, not necessarily the cold, but the colors are amazing!  Snickers Hot Chocolate and cuddle time with a blanket on the couch are definitely the best!!  Slow cooker soups, White Chocolate Pumpkin Cheese cake and all kinds of pumpkin treats are the best!!  We are looking forward to our last winter in Alaska (Hopefully) and they boys are excited for the ski team.  Sorry for pulling the disappearing act.  Hopefully it won't happen again, although I can't promise.

Suffed Mushrooms



If you are ever looking for an appetizer, this needs to be your fall back recipe. Seriously - this is the best mushrooms recipe I have EVER had. I made them for our Favorite things party. Since it is my favorite appetizer. Even people that don't like mushrooms tried it (because they always like the things that I make.) She couldn’t stop eating them (as long as she didn’t look at them) and commented several times how good they were. You should try them!!


Stuffed Mushrooms

Ingredients:

Mushrooms* 45-50

Cream Cheese (I use 1/3 fat free) – 8 oz.

1 lb Jimmy Dean bulk Sausage

½ cup Parmesan Cheese – shredded (I use fresh)



Directions:

1. Preheat oven to 35o degrees.

2. Brown sausage in a pan until cooked. While sausage is cooking – remove stems from mushrooms.

3. Add cream cheese to cooked sausage and stir until well mixed.

4. Add parmesan cheese and mix well.

5. Using a spoon, add mixture to hole in mushroom where stem was. As seen in the picture, I add a little hill to them mushroom.

6. Bake in preheated oven for 25-30 minutes.

7. Serve immediately.

Note: these can be made ahead of time and kept in the fridge or put in the oven if you have an autostart oven. I like to make these the morning of an event or a party so that I am not scrambling around last minute trying to get this done on top of everything else.

*I use mushrooms that you can buy individually and I usually pick out the bigger ones because I LOVE these mushrooms.

Vincent van Gogh

So, for art this year, we are learning about 8 of the major artists in history.  We are just finishing our lesson on van Gogh.  So, tonight, we did a painting project.  Kennie and Justin had to pick one of the van Gogh pictures we learned about and try and paint it.  Easy, right?  They thought so!  Nate & Maggie just got to play with finger paints.


Justin decided he was done right after I took this picture.  He choose to do Starry Night.

 Kennie choose Starry Night as well.  He's my little perfectionist and so he only got half done by the time we needed to head to bed, so he is going to finish tomorrow.
 So, now I am wishing that I would have put a shirt on Maggie.  All I could think about was that I didn't want her pj's getting dirty.  Sorry!
Nate had the time of his life!!!

Sometimes I feel guilty because I probably learn more than the boys do.  That would be the case with Vincent van Gogh.  Kennie knew quite a bit.  I knew none of it.  Can't wait for Picasso.  We are also getting to the states.  Just have to finish up the pre states lessons!!!

Time Out!

Okay, I have been terrible about keeping this up during the last summer but I promise an update on everyone soon.  Right now, I need to record some feelings and emotions I am feeling. 

I just finished a Mommy Time Out!  Or, Time Out for Women by Deseret Book.  I was super excited when I found out they were coming to Anchorage.  I couldn't go when they came to Indianapolis because I was super pregnant with Maggie and I didn't want to chance being so far away.  She ended up being born on the first day.  But, I wanted to go so bad.  So, I got a couple of friends to agree to go with me and was super excited.

I took 6 pages of notes.  Single spaced and small handwriting.  As I think back over the last few days, I am truly lifted and edified.  The theme for 2011 is Choose to Become.  All things are possible...to those who believe.

The highlight of the event for me was listening to Brad Wilcox.  He is one of my modern day heros.  As the author of The Continous Atonement he made the Atonement real for me.  Explained and taught me the Atonement on a different level.  I took 2 pages of notes on his talk.  LOVED it!!!  I will share with you just a few things he said that touched my heart. 
  • The Celestial Kingdom isn't the end.  It's a means to the end.  The end is becoming even as our Heavenly Father is.
  • If our on.y goal is to get back home, why did we leave in the first place?  Our goal is to return better than we left.  At a higher level.
  • God loves us just the way we are.  But he still wants us to learn and grow and make good choices.  Just as a grandfather loves his grandchildren just the way they are.  He still wants them to learn to talk, walk, read and play.  He wants them to become better.
And, the best line in his whole talk, If He always holds our head above water, would we ever learn to swim?  Simply amazing.  I got to meet Brad.  He hugged me and I felt the love and grace of my Heavenly Father fill me as I hugged him and spoke to him.  Such an amazing man!!!



Another fun thing for me was Mercy River.  Hello, where have I been.  They are amazing.  They sang a song that they are working on for their new album and can't wait to get my hands on it.  Laughed until I cried - seriously.  Bye Bye Bye.  Remember NSYNC?  It's a remake of their song but it's about putting kids to bed.  We were all on our feet.  They also sang a song from their CD coming out in February about being beautiful.  It was truly beautiful!  Just reinforces that if we could see what He sees, we would truley love ourselves.

If you can go to Time Out for Women, I will recommend it with my whole being.  I really needed this "Time out" to rededicate myself and be reminded of my divine potential.  We can always use a pick-me-up.  I want to share with you one more line.  It's probably my favorite line of the whole weekend.

Strawberries and Cream Trifle

This is totally for me, so, sorry!  I need a place to record this recipe so I don't lose it.

Strawberries and Cream Trifle

1 14 oz can Eagle sweet and condensed milk
1 1/2 cup cold water
1 (4 serving size) instant vanilla pudding and pie mix
1 8 oz container Cool Whip
4 cups sliced fresh strawberries (more for garnishing)
1 cup Smucker's special recipe Strawberry Preserves
1 large (9 inch) prepared angel food cake cut into 3/4 inch cubes
2 T sliced almonds

Whisk sweet and condensed milk and water in a large bowl.  Add pudding mix and whisk for 2 minutes, until well blended.  Refrigerate for 5 minutes, fold in whipped topping. 

Stir together strawberry preserves and sliced strawberries.  Spoon 2 cups of pudding mixture into bottom of a 4 qt trifle bowl.  Top with 1/2 the cake cubes, half the strawberries and half the remaining pudding mixture.  Repeat layers ending with the pudding.  Chill in fridge for 3-4 hours.  Garnish with sliced strawberries and almonds before serving.

Lessons Learned

So, I thought I would record some of the things I have learned over Aaron's deployment.  This is more for me, but they might help someone else. 

  • Friends are not required to be close to help.  I could feel the prayers and support from thousands of miles.  It lifted me when I was weak and comforted me when I was sad.

  • Friends that live close to me became my lifelines.  They physically lifted me when I was down.  They were here to dry my tears.  They took my kids so I could go to the grocery store without 4 kids and smiled and listened when I needed it.  Without them, I would have survived this, but I would be in a padded room right now.

  • The Lord knows what we need when we need it!  There were several times I got some pretty emotional news.  A man down the street was shot and killed at the airport 20 miles from where Aaron was and the announcement of the death of Bin Lauden.  Those are just a few.  When all of these happened (or I found out about it), I wasn't alone.  I had someone hear to dry my tears and lift me up.

  • There were times that I could literally feel the arms of the Savior around me.  I felt protected, loved and validated.  Knowing that he knew my sufferings, my emotions, my feelings and my pains was so comforting.  He became my lifeline. 

  • Not all things are about me.  I came to the conclusion that this deployment was not about me.  I was not supposed to learn some big lesson.  Sometimes in our lives, we are given trials just to endure them and do it well.  (D&C 121:7-9).  When I read this, I felt a huge wave of relief.  I wasn't being punished.  I was blessed the entire time Aaron was gone.  I earned every blessing that I received.  I know that.

  • I didn't realize how many people struggled with Aaron's deployment.  (Again, not all about me.)  Just because they didn't live with him or smell his morning breath didn't mean that they didn't miss him or worry about him. 

  • I take my husband for granted.  In all aspects.  I missed him so much.  Not just the big things.  The little things.  Taking out the garbage.  Holding my hand while we watched a movie.  I don't ever want to do that again.  I feel so much closer to him and our relationship is stronger. 

That is just a few.  I will add more as the days go by, but I want to remember how I feel now.

Cars Carmel Corn!

For our treat tonight, we celebrated the release of Cars 2.  The kids all want to see it.  I thought I would share the recipe!

Cars Carmel Corn

Ingredients:
2 bags of (light or no butter) popcorn (or air popped)
1/2 cup butter
1/2 cup brown sugar
100-120 cars marshmallows (or 20-24 large plain), divided


















Step 1: Make popcorn.  Set aside.  Put butter, brown sugar, 50-60 cars marshmallows (or 10-12 large plain) in a microwavable bowl.  Microwave on high for 1 minute.  Stir until marshmallows are melted and combined.



Step 2: Add remaining 50-60 marshmallows (or 10-12 large plain) and microwave on high 1 minute.  Stir until mostly combined.  (The kids thought it was super fun to have different color streaks in the popcorn, so we didn't stir until all marshmallows were mixed in.)



Step 3:



Step 4:  Pour over popcorn and stir.  Enjoy!  Make sure you have paper towels or napkins.  Fingers get sticky.  Depending on how gooey you want your popcorn you can make more of the carmel topping.  We like it gooey so we make another 1/2-whole batch.  We use air popped popcorn.  We don't like the butter on the popcorn for carmel corn.  The moves...totally different story.  ENJOY!!

Thunderbird Falls

We went on Friday and did the Thunderbird Falls hike with Sassy's parents and Luke.  The kids did pretty good although they were getting tired when we were headed back.  Here are a few of the picture.

















It was absolutely stunning.  It's hard to be in a place as beautiful as this and believe that there are people that don't believe in God.  We are so thankful for the opportunity we had to be here!

Military wives are dependants?

I was directed to this article from a friend...

After reading a Navy Wives Facebook Support Page, I thought a few girls needed this one.

This Column is Dedicated to The Spouses, “Those who Silently Serve.”

Anything But Dependent is the title I chose for this weekly spouse column. I came up with this title because of the stereotype we are given. Our civilian counterparts have labeled us as dependent, needy, and whiney. I am normally pretty reserved when someone has views different from my own. I respect them, keep an open mind, and try to gain perspective from listening to others. But this is something that I can’t keep quiet about. I even caught myself snapping at a very rude woman in line behind me at the store once. She was talking about living in “this town” and how she was tired of “these lazy military wives” to a friend on the phone.

She was referring to an exhausted looking woman in pajama pants who was in front of us holding her credit card and a Military ID. While I waited for her to end her conversation, thoughts flew through my mind. Who was the woman in the pajama pants? I wonder what would bring her to the store at 7:45AM. Was she sick with no one to help her? Was she getting something for her child that couldn’t wait until later?

I then started thinking of all the times that I have gone to the store in sweat pants and my hair tied in a knotty mess just to get the much-needed medicine for my children or myself. So many thoughts were rushing through my brain that it made my face heat up. The women hung up her phone and I turned to her and said, “I couldn’t help but over hear your comment about military wives, I just wanted to let you know that you are putting a very negative stereotype on a large and amazing group of women.” She replied, “There’s nothing amazing about women that sit around waiting on their husbands and having babies!”

“Oh, no she did not just say that,” I thought to myself. It took all I had not to scream at this woman. I paid for my items and then I calmly turned and faced her eye to eye and said,” I am the wife of an active duty Navy man who protects your right to say whatever you want, but I will have you know that I don’t sit around and wait for him. I have my own life, a job, two amazing children, and I get more done by 9 am than most women do in an entire day. Maybe you should think twice before labeling someone you know nothing about”. I then walked away without giving her the chance to reply.

I felt a rush of adrenaline and emotion. Is that what people really think of the military wife? I quickly came to the conclusion that this girl was just ignorant. She doesn’t know any better. How would she? No one lies across their bed as a teenage girl dreaming of marrying the man of her dreams who will seldom be home. I’m sure she doesn’t know the strength it takes to give birth while your husband is deployed or take care of a child all by herself night after night, not knowing when her next full night of rest may be. This girl has never moved into a town she didn’t know and had to purchase a home or find a job by herself not knowing how long she will live there. Only the women that have walked in the shoes know the challenges, obstacles, and extreme strength it takes to do all of this.

Military spouses are anything but dependent. The military labels us as a “dependent” of our husbands. And I understand what the military means by it. But, by the definition of the word itself, we are far from it. My husband likes to say he couldn’t function in the Navy without me. I’m his rock. We are best friends and a team. Sure my husband could have done this by himself, but he isn’t. The Navy did not issue me; therefore I’m not a necessity, right? My husband would argue that one. We believe that without each other, we wouldn’t be who we are today. We give credit to each other for all of our successes. Nothing has been accomplished alone. I’m sure that there might be a few salty men that disagree with the statement saying that their wife had nothing to do with their success and vice versa. Maybe it’s true, but that is something I would happily and respectfully challenge.

With that said, there is a fine line between dependency and support. I look to my husband for support, but I am not dependent. I support my husband, but he is not dependent upon me. We encourage, love, and respect each other. And together, though sometimes very far apart, we take on the world one day at a time.

Military wives are strong, smart, resourceful, and can do anything that they put their minds to. We could give MacGyver a run for his money. As women, we need to find the strength within ourselves and not be discouraged by the word “dependent”. This is where that cute childhood saying comes in. Anything boys can do, girls can do better. Well, maybe not always better, but we can do it. And while our husbands are away, we do it all and then some. Although I admit, there are some things I wish my husband were here to do during the deployments. An example would be that it is a well-known fact that my air conditioner and I are not friends. My lawn mower and I go through angry spells and there are days that my trimmer won’t even talk with me. Well, if talking was considered turning on. And of course the biggest issue is that my best friend is deployed.

The bottom line is that we can run a household, have a career, find time to volunteer, raise a family, go to school, start a business, have time with our biological families and our Navy families, taxi our children around and so much more, but with one huge difference. Our husbands are serving in the military. The worry, stress, and schedule add weight to everything above. Be proud of your accomplishments. You really are anything but dependent.

I will say my piece on this article.  I have had this happen to me.  I pulled out my military ID to show proof of signiture for my credit card when a woman in her mid 50's made this loud breathing sound and said, "Oh, she's one of those."  To which I turned to look at her.  (She was surprised I turned).  "Excuse me?" I said.  "You know, you flash your military ID and expect discounts, special treatments and people to do whatever you want.  This town isn't just about you."  I tried to keep my head, but I did respond.  "I'm sorry ma'am.  Did I cut in front of you in line?  (She answered no).  Did I ask for a discount? (the clerk verified that I did not).  I didn't ask for special treatment.  I just want to pay for my stuff and get home.  At this point - she goes postal.

"You military people come into OUR town and change everything.  You take over voting and make polocies, you change our laws and how our city functions then you get to move on and leave us to deal with all the changes.  You file for and take PFD even though you aren't a permanent resident of Alaska.  Why can't you just leave us alone."

As I sat there and listened to hear, I felt sorry for her.  My response is very calm for me.  I'm normally a fighter.  I simply said, "I'm sorry you have had a terrible experience with someone to give you such negative impression of the military.  I am so glad that my husband is out there putting his life on the line to give you the ability to say mean and cruel things about him and the upstanding work he is doing.  Saving peoples lives.  Creating a better environment for our children to live in.  You say you want us to go?  (She answered yes),  So, what would happen if we left.  You would lose thousands of people to support your economy,  You would have some of the fishing tourism, but honestly, I don't think you can fathom what would happen to your quaint little down if we pulled out.  Do you want to see?"

She walked away shaking her head at me.  I was shaking hard and had a difficult time calming down.  I finally did.  I am so proud of my husband and what he stands for.  I am proud of me and my kids and us standing behind him as a unified family saying this is our life and it is good.  Aaron is happy with what he does.  He helps people.  He is good at what he does.  His patients love him.  We wish we could see him more, but right now, that's not possible. 

Life is falling apart around me right now when Aaron's gone.  I have taken 2 kids the the ER (the day before their birthdays), done mothers day (yuck!), I had no water for 4 days.  I am getting sick.  I need to get stuff in the mail for people expecting it this week.  My husband is in Afghanistan.  I don't have him to help me pick up the pieces.  I do this all alone.  Homeschool, piano lessons, training for my 10 k, church callings (which I kinda fill in for him too).

Friends - my friends here have been amazing.  I am come close to losing it several times only to be told by a friend that they are watching my kids while I take one to the ER or I can go running or just to the store with no extra hands.  Peace and quiet.  I miss that. 

Tomorrow, I will get up, shower, welcome Luke (a boy I watch), run some errands for Justin's birthday shindig tomorrow night.  head home, pick up friends and head to the Alaska Zoo.  Let's hope for something grand.Follow the zoo with cupcakes and ice cream  He needs to celebrate.  This is all my by self.  Somewhere in there I need to fit in History, Science, Language Arts, Math, Japanese and Typing.  Trying to get the year wrapped up.

My desire: I don't want to be pitied.  Those looks send me over the moon.  I don't even want help most of the time.  I am only asking for understanding.  You may not have ever stood in my exact shoes, but there has to be a time somewhere sometime that you can somewhat relate to an and least support us as we support our men and women and pray for a peaceful solution soon.

Aaron Update

Aaron is still plugging through.  He still hasn't had a day off.  We are past the 5 month mark.  The end is supposed to be in sight, but for some reason, there has been a blindfold over my eyes and I no longer understand or at this point care what is changing each day.Until I get the call that he is in the states and on his way to Alaska, I won't believe it.  At that point, I will probably faint, but I will at last be able to believe something.

My Faith in the military was low starting out but with this deployment, I have lost all faith and trust that I had in the Air Force.   They wonder why people get out as soon as their time is up.  Maybe you should change some things and people might stay around.


He still works 14-16 hour shifts.  He words the nights which is nice because their nights are our days.  We occasionally get to talk to him, but usually for not more than 5 or 10 minutes.  He is busy and focused on what he is doing.

DUDE - We miss you like CRAZY and can't wait to hold you!!

Life isn't fair...

I just watched another reunion of a military member coming home from Afghanistan.  Bawled my eyes out.  The events the last two weeks have brought my emotions on my sleeve.  I swear I have a permanent track from my bottom eyelid to my chin on each side of my face.

I keep playing a song from Glee in my mind.  "So I throw up my fists, throw a punch in the air and accept the truth that sometime life isn't fair. I'll send out a wish, ya I'll send up a flare that finally someone will see how much I care."

A family down the street is one that will forever be affected by the shooting at Kabul Airport almost 2 weeks ago.  The kids father and a sweet lady's husband was shot and killed.  In one split second, their lives changed forever.  My head knows that Aaron is safe but that doesn't stop my heart from playing the what if's.  What if it were Aaron.  What would I do without my soulmate?  Then, I cry my tears into my pillow until I fall asleep.  I am sick of this.  I want my husband home.  I am also reminded daily that people have it worse the me.  I know that.  However, that doesn't turn off my feelings.  I am still allowed to feel what I feel. 

Moving off my soapbox, we have an approximate date for Aaron's departure.  Just under 2 months left.  I CAN'T wait.  Oh how I miss him!!

DIY Magnetic Board - How To

A few years ago I started making these for the boys preschool teachers.  Last year, a bunch of girls got together and made them for teacher appreciation week.  Last Friday night, a bunch of girls got together to make some more.  I love watching people get so excited to create!!

Here is a picture of the finished product!



What you will need:

1 8x12 shingle from Home Depot (I couldn't find them at Lowes.  They are in the shingle department.  Make sure you get the silver metal one.)
 2 pieces of printed cute matching paper
Ribbon
Mod podge and brush
Cropodile
Buttons
Magnets (I just picked mine up at Home Depot while we were there.  They give a military discount!)
Superglue (not pictured)



Directions:

1.  Cut your paper.  You will need once piece measureing 2.75 (or 2 3/4) by 12 and one piece measuring 5.25 (or 5 1/4) by 12.  Mod Podge the top of the shingle and apply the smaller of the 2 pieces of paper.

2.  Mod podge the bottom paper to the shingle.  Make sure you let it completly dry.  Now would be a good time to superglue your button to the magnet. 



3.  Mod Podge over the whole board to seal the paper.  It's okay if you see white, it will clear.  Just don't put too thick of a coat on it. 

4.  Use adhesive to attach ribbon to cover the overlap of paper.  (In the above picture, I used mod podge on the ribbon strip because it is mesh and there is no place to put adhesive.  I just let it dry fully before I did it.)  I wrap my ribbon around the back so you can't see the ends and it won't frey.

5.  Using the Cropodile (or other tool), punch the holes in the top of the shingle.  String ribbon through the holes and tie a bow or a know.

**Note:  Make sure you let the top coat of Mod Podge dry before sticking your magnet on the board.  It will leave a permenant mark on the board if it isn't fully dried.

Let it be written....

Today is the day for a huge first for me.  But, let me guarantee you, it won't be the last!

This morning was the first time since my dad has been here that we woke up to an alarm.  7:24 am.  Ya.  Pretty early for me.  Why you ask?  The Heart Run was today.  I made it!!!

Starting the race.  The kids were so excited.  That's me.  #7459!!  Lyn is behind me.  For those who are unaware, a 5k is 3.1 miles.  I have been training for this since November.  When I started, I hadn't run longer that to the end of then street.  I've always had an excuse.  I took the excuse away.  No excuses any more.  If I didn't want to run, then I wouldn't run, but I wasn't going to make an excuse.


That's me.  The green shirt with the white hat.  Lyn is beside me.  This is the end of the race.  We ran the 3.1 miles in 36 minutes and 19 seconds.  Just over a 12 minute mile.  Not bad for my first race ever.  Lyn and I hope to improve our time and do better at the Skinny Raven run with Dana!!!  One last photo, because I look SO great!!


The race is over!  We did it!!

Around Christmas time, while listening to Pandora, I hear the song While you were Sleeping by Casting Crowns.  I loved this song.  I have never heard them.  As I was listening to my I-tunes on the way back from Seward yesterday, it came on.  I discovered that it isn't only Christmas.  Which I knew, but had forgotten.  I'd like to share the lyrics with you.  I've added the song to my blog.  I hope you enjoy it!  It brings me so much peace right now!!

RAK - Join me....

So, I recently read this post about a gal that did 41 Random Acts of Kindness.  (RAK)  I have decided I want to focus on something else.  Does anyone else want to join me?  I need to feel the spirit of service and love again.  I am going to try to do at least 1 RAK per day between now and Easter.  I will share with you some of my experiences.  I know that these things don't always lead to huge things, but that's not the point.  Please join me!!

Small Update

So, just a small update so you all know we are alive! We are trying to get back into the swing of things. That is so hard after such a fabulous vacation!

Kennie - He is enjoying being able to play outside and I can't get him to put down the books when he is inside. He reads everything he can. Sometimes 2 or 3 times. His latest is he wants to read the Book of Mormon so he is working on that. The 2 older boys got to go skiing with a neighbor and it was their first time. They were both super quick to pick it up and they can't wait to go back!

Justin - He is being Justin. Just tonight, he fell head first into a bunch of rocks while rollerblading. I maybe should have taken him to the ER but was assured by a medical friend that he should be okay. He had a blast on his first time skiing as well and can't wait for lessons this next winter.

**I gave Kennie and Justin a chance to go back into public school. This wasn't what I wanted, but I wanted them to make the choice. The decided they still want to be home schooled. That has to say something about me, right??

Nate - Nate is Nate. We might need to change his ADHD medication, but we will see what our (AWESOME) doctor says. He wants to do everything his brothers do but can't because he isn't tall enough or weigh enough. We are super excited that Nate was accepted into the Japanese Immersion program that he will start in August when he starts Kindergarten. They do normal school in the morning but then the afternoon is all in Japanese. I'm pretty excited for this! Plus, he is super excited too!!

Maggie - She is the princess. To say that she runs the house (at least her brothers) is an understatement. She is super emotional and always has to get her way. She has had a big wake up call since daddy has been gone! :) What a mean mom I am!

Aaron is doing really good. He works 7 days a week and he works 12-14 hour shifts. He has seen some pretty crazy things but continues to stay positive. He is truly my hero! He cut his hair. It's shorter than I have seen it in the 10 1/2 years I have known him.

Sassy is just trying to sane. That's easier said than done most days, but I'm not in a straight jacket yet. I need to figure out the balance of school, housework, me time, kid time and all my church and other responsibilities. By the time I figure it out, Aaron will be home, but whatever!! I am just so excited for h8im to come home. I miss him SO much.

Delicious Recipe - White Lasagna

White Lasagna


1 package lasagna noodles, cooked 8-10 minutes
1/2 large onion, chopped
1 rotisserie chicken - meat pulled off and sliced (I crumbled it when I put it in the pan)
2 (6 oz) cans of artichokes, drained and chopped
1 pkg frozen spinach, thawed and strained
3 cloves garlic
1 tsp Extra Virgin Olive Oil
1 (8 oz) container of Ricotta Cheese
2 cups Mozzarella Cheese
2 cans cream of mushroom soup
3 cups heavy cream
1 cup fresh shredded Parmesan cheese
1/4 cup butter

1. Start and cook lasagna noodles cooking.

2. While noodles are cooking, saute onion in EVOO over medium heat. When tender, crumble chicken and mix together. Add garlic, drained spinach and chopped artichokes and mix well.

3. While chicken mixture is warming, combine cream of mushroom soup, butter, heavy cream and Parmesan cheese in a medium sauce pan. Cook on medium heat until warm and slightly bubbly. Turn to low just to keep it warm.

Spread a small amount of sauce (I did 1/4 cup) on bottom of 9x13 pan. Layer 1/3 noodles over sauce. Spread 1/2 ricotta cheese over noodles. Top with 1/2 chicken mixture followed by 1 cup mozzarella cheese. Spoon 1/2 sauce over cheese. Add 1/3 noodles. Top with remaining ricotta cheese, chicken mixture. Then layer remaining noodles and top with sauce.

Bake at 350 for 1 hour. Turn off stove, sprinkle remaining mozzarella cheese over top and let sit in oven for 5 minutes.
